Vegan Chocolate Rice Krispies

I’m the girl that prefers to bake desserts over cooking meals. I don’t know if it has to do with desserts being sweet. It might be because I don’t have to cook an entree and sides when I bake a dessert. I ended up making this vegan treat because I’m slowly getting back to being a pescatarian. Anyway, here’s the recipe below. I did have to make a substitution because everyone was sold out of a particular item but no one could taste the difference.

Vegan Chocolate Rice Krispies Recipe

1 cup of brown rice syrup (you can also substitute with honey)

2 tablespoons organic virgin coconut oil

2 teaspoons pure vanilla extract

1/2 teaspoon sea salt

1 cup of creamy almond butter (I used chocolate Nutella almond butter)

2 teaspoons ground cinnamon

7 cups of chocolate crisp brown rice cereal

  1. I lined a baking pan of choice with parchment paper
  2. In a medium saucepan over medium-high heat, I combined the rice syrup (honey), coconut oil, vanilla, & salt. I brought it to a rolling boil for about one minute. I removed the pan from the heat. Stir in the almond butter and cinnamon.
  3. Place the cereal in a large mixing bowl. Pour the almond butter mixture over the cereal and stir it until it is all coated. I took the mixture and placed it in the pan. I pressed it down into the pan. I let it cool down for about a minute or two and then cut it into squares.

It literally took about 15-20 mins to make. These are the perfect snack during the day and after dinner when you just want a simple sweet treat.
